Shrimp Cakes with Edamame Quinoa Salad

Quinoa salad

Ingredients
Quinoa 1 cup
Water 1 1/2 cups
Edamame beans 1 cup
Corn 1 cup canned
Red bell pepper 2 cups, diced
Garlic 2 tablespoons, minced
Red onion 1/2 cup, diced
Cilantro 1/2 cup, chopped
Olive oil 1 tablespoon
Lemon juice 1/4 cup
Salt 1/2 teaspoon
Pepper 1/2 teaspoon
Instructions
Combine quinoa and water in a medium pot. Cook until boiling. Cover and simmer for 15 minutes. Take off the stove and let sit for 10 minutes.
Add the remaining ingredients to create salad. Chill for 2 hours.
Shrimp cake

Makes 6 large cakes
Ingredients
Shrimp 1 lb. Raw, deveined and peeled
Green onion 2 tablespoons, sliced
Paprika 1/4 teaspoon
Breadcrumbs (Italian or Panko) 3/4 cup
Lemon zest 1 lemon
Salt 1/2 teaspoon
White pepper 1/2 teaspoon
3 medium eggs
3 tablespoons Jocoque Seco con Chipotle cream for batter mixture
3 tablespoons Jocoque Seco con Chipotle cream for topping
Instructions
Cook shrimp and use a blender to chop the shrimp finely. Beat eggs and add to the shrimp and the remaining ingredients. Form cakes by hand and fry in 2 cups of grape seed oil until crispy and golden brown. Top with Jocoque Seco con Chipotle.
